A restaurant can lose a routine order during a rush, while a catering enquiry arrives through web, email or text. Palona AI addresses that demand-capture problem with conversational agents. An order written into a point-of-sale system is not necessarily paid, prepared or delivered.
From sales agents to restaurant operations
Palona launched publicly on 23 January 2025 with a reported $10 million seed round and a broad consumer-commerce thesis. Its initial agents used a product catalogue and knowledge base, remembered context and attempted upsell. Examples included Wyze, MINDZERO and Pizza My Heart. Adweek independently corroborated the funding and described the goal as restoring direct customer relationships disrupted by marketplaces. 1 2
WIRED’s reporter test of Pizza My Heart’s “Jimmy the Surfer” showed product discussion, recommendation and order assistance by text. The agent said payment could be made to the delivery driver by cash or card; the test did not show in-chat payment. A MINDZERO test described catalogue grounding, memory, supervision and upsell, but supplied no conversion or revenue denominator. These were public observations, not measured customer return on investment. 3
Palona made restaurants a dedicated vertical in June 2025. Its announcement described voice and text ordering, menu modifications, recommendations, confirmation, escalation to people, loyalty and coupons, secure-payment integration and multilingual support claims. It said a Pizza My Heart pilot preceded work with more than 20 restaurants and brands, including CaliBBQ, MOTO Pizza and others. It did not establish implementation effort, exception rates, price or point-of-sale performance. 4
What the workflow establishes
Palona now describes an AI operating layer for physical businesses, proven first in restaurants. Its Catering Agent accepts phone, text, web-form and email enquiries; asks about guest count, date, dietary needs, budget, timing and service style; proposes quantities and additions; and sends a structured brief to a catering manager for follow-up. Its public 80-person, $4,200 example is illustrative, not a named result. The page also claims 53 locations were live at once and captured first enquiries on day one, without a named customer or before-and-after denominator. 5 6
The clearest integration evidence is the Toast workflow. Palona says its agent handles modifications, coupons and recommendations, then submits an order directly into Toast. Managers can inspect calls and transcripts and view phone-generated order count and value; transfers route unusual requests to staff. Palona explicitly warns that an order recorded in the system is not automatically paid or fulfilled. Menu and modifier accuracy, location policies, kitchen routing, transfer behaviour and payment remain acceptance-test items. 7
The strongest reported production evidence covers 481 orders over 194 location-days across Giordano’s, Cali BBQ and Rooted Hospitality, plus 305 large-order or catering enquiries across seven restaurants. Palona also reported a 20% year-over-year increase in Cali BBQ Father’s Day revenue after more than a year in production, and said Palona became that restaurant’s highest-average-order-value channel. Restaurant Technology News and PMQ Pizza reported these figures, but the accounts disclose no control locations, traffic mix, unanswered-call baseline, conversion denominator, paid-versus-fulfilled reconciliation or causal method. These are production signals, not audited incremental revenue. 8 9
An illustrative business test
For a restaurant or distributor handling repeat, rules-based demand, an illustrative pilot would start with one location and one catering flow for 30 days. Provide the approved menu or catalogue, location hours, modifiers, coupons, transfer rules, payment configuration and escalation owners. The agent may prepare a request, but named owners remain authoritative for substitutions, unusual commitments, complaints, payment exceptions and fulfilment.
Measure answered calls, qualified enquiries, conversion, average order value, staff minutes, transfer loops, duplicate actions, errors and paid-versus-fulfilled orders against a pre-period baseline. For an industrial business, this evidence does not establish support for drawing revisions, materials, tolerances, tooling, capacity or binding quotations. The transferable pattern is narrower: capture structured intent from controlled information, validate it against the authoritative system and route consequential exceptions to a person.
Access and controls
Deployment is vendor-led rather than self-serve. No public price, setup fee, contract minimum, usage unit, service-level agreement, application programming interface documentation or self-hosted option was found. Data governance, export behaviour and point-of-sale coverage remain undisclosed; the 2026 multimodal direction remains unverified independently.
